Raisins, dried strawberries, dried mangoes and other dried fruits are increasingly loved and favored by consumers because of their convenience, easy storage, good taste and flavor. So how are these delicious dried fruits made? Today, we take the raisins that everyone often eats as an example to talk about its specific drying process.
The drying process of raisins is divided into four stages, namely, fruit selection, fruit washing, drying and packaging;
The first is fruit selection: you need to choose seedless varieties with appropriate maturity and high sugar content.
The second step is fruit washing: to ensure the cleanliness of the finished raisins, you need to wash the grapes before drying to remove the wax and microorganisms attached to the peel.
The third is drying: With the implementation of environmental protection policies, new energy-saving, environmentally friendly, green and efficient air energy has been widely promoted and applied. At present, the most widely used equipment for grape drying is air energy heat pump drying room;
Air energy heat pump drying room, due to the application of intelligent control system, also has the characteristics of precise temperature and humidity control, and can flexibly control the temperature, humidity and air volume and other parameters in the process of grape drying, so that the grapes are always dried in a scientific and reasonable environment, effectively ensuring the quality of the dried grapes after drying.
The drying process of raisins is as follows:
The initial temperature is 45~50℃, the final temperature is 70~75℃, and the drying time is 42~60 hours;
The entire grape drying process needs to remove 70% of the water, and the raisins need to be kept green until no juice seeps out when pressed by hand. At this time, the moisture content should be 15%~17%.
After drying, you can use a raisin stem remover to remove the stems and dry branches and leaves, and then grade and package the raisins according to color, fullness, and sourness;
