What are the key drying processes for shiitake mushrooms?

Shiitake mushroom drying has strict requirements for tray loading. When loading, the mushrooms must be placed evenly with the caps facing up and the stems facing down. They must not overlap or pile up to prevent damage and quality issues. It is recommended that mushrooms be delivered to the drying room within 6 hours of harvesting. Any remaining mushrooms should be stored in a cold storage facility.

During the drying phase of the shiitake mushroom drying process, precise temperature and humidity control is crucial. During the initial drying phase, the temperature should be kept low, ideally around 35°C, for 3-4 hours. The temperature should be increased by 1-2°C every hour until it reaches 40°C. Next comes the uniform drying phase, set for 4-5 hours, with the temperature increasing by 2°C per hour. Once the temperature reaches 50°C, the temperature can be increased by another 1°C per hour for another 3-4 hours. Next comes the complete drying stage, which lasts 8-9 hours at a temperature of 55-60°C. After this, an additional hour of complete drying is required at 60-65°C. After this stage, the mushrooms will develop their gills and aroma.

During the drying process, in addition to ensuring precise control of temperature and humidity, the following five aspects should be noted:

1. Avoid rapid heating and cooling; it is recommended to use a gradual increase or decrease to prevent wrinkling of the mushroom caps, which can affect quality.

2. The high temperature should not exceed 65°C, otherwise the dried mushrooms will have a burnt smell.

3. To ensure a uniform color on the surface of the dried mushrooms, use a sprayer to evenly spray clean water on the dried mushrooms, but be careful not to spray the gills. Place the dried mushrooms in the drying room and allow them to dry for half an hour before continuing to dry.

4. Once the dried mushrooms have cooled to room temperature, they can be packaged.

5. Packaging should be done promptly and then stored in a dry, dark environment. The drying process is complete only when packaging is complete. Shiitake mushrooms dried using the Shiitake mushroom drying process have the following characteristics: they have their own special fragrance; the gills are uniform in color, upright and complete, and not inverted; the moisture content of the mushroom body is below 13%, the dried Shiitake mushrooms maintain their original shape as a whole, the cap is round and flat, and the color is natural.
