Morels are a precious mushroom, rich in nutrients and highly sought after by consumers. However, fresh morels can only be stored for three days at room temperature, making them difficult to preserve for extended periods. This requires significant packaging and transportation costs to ensure fresh morels are readily available, often requiring air freight and other methods for preservation. However, drying can extend their shelf life. This removes the moisture from the mushrooms, creating dried morels that can be preserved for a longer period.

Due to their precious nature, drying morels requires extreme caution. They have extremely high temperature and humidity requirements. Fresh morels will drop out droplets with just a gentle squeeze, resulting in a high water content. This characteristic necessitates careful temperature and humidity control, making them a high-risk drying material.

Generally, drying morels takes less than four hours and is divided into four stages.

In the first stage, the drying room temperature is raised to 35°C, the humidity is kept below 70%, and the drying is continued for approximately three hours, allowing the shape and color to be fixed at low temperatures.

In the second stage, the temperature is gradually increased to 42°C for two hours, while the humidity is maintained below 55%. This significantly reduces the moisture content.

After the first two stages of drying, the third stage requires increasing the temperature to 48°C and the humidity to 35% for two hours. This stage requires accelerated drying.

In the final stage, the temperature is raised to 55°C and the humidity is reduced to below 15%, drying the morels at medium-high temperatures. Drying can be stopped when the morels become crispy when pinched.

It is important to note that the temperature should not be raised too quickly during the drying process; a temperature of approximately 5°C per stage is ideal. The resulting morels have a moisture content of approximately 12%, a plump appearance, an off-white stem, a brown or black cap, and a fragrant aroma.

Over 95% of mushrooms can also be dried, including porcini, bamboo fungus, matsutake, reishi, hericium erinaceus, black and white fungus, shimeji mushrooms, king oyster mushrooms, tea tree mushrooms, red mushrooms, flower mushrooms, enoki mushrooms, coprinus comatus, nameko mushrooms, and shiitake mushrooms. Dried mushrooms not only preserve their flavor over time, but also enhance their flavor.
